Made with Foodstirs and Once Upon a Farm Green Kale & Apples
If you are looking for an easy treat to share at a party or a make ahead brunch-side, try these delicious muffins. Foodstirs has brought the fun back to baking in my house. Boxed pancake and cake mixes have been popular since the 1930’s and have always been a fun and easy way to whip up a special treat with the kids, but have you looked at the back of their boxes? Seriously, have you looked? So many of the popular brands have a LONG list of ingredients I can’t pronounce and don’t wish to have in MY desserts.
With Foodstirs I know the ingredients are high quality, consciously sourced, organic, non-gmo and let me tell you the honest truth… they taste way better than those other mixes ever could! Try the recipe below and let us know what you think. Picky toddler approved (and approved by the rest of the family too).
Brown Butter, Banana, & Kale Mini Muffins
Prep: 10 min
Bake: 10 min
Yields: 12 – 15 mini muffins
1 Foodstirs Organic Sunday Stacks Pancake Mix
1 Once Upon A Farm Green Kale & Apples Pouch
4 Tbs butter, browned and cooled
1/3 cup milk of choice
1 Foodstirs Organic Glaze Mix
3 Tbs maple syrup
2 Tbs water
Preheat oven to 350 degrees and line a mini muffin pan with muffin liners. Set aside.
In a skillet over medium heat, melt the butter and heat until it begins to brown and smell nutty, about 3 minutes. Remove from heat and set aside.
In a large bowl, whisk together the eggs, milk and Green Kale & Apple pouch. Slowly add browned butter and dry pancake mix and whisk until a batter forms.
Spoon into muffin liners, filling each halfway full. Bake 7-10 minutes, until a toothpick inserted into the center comes out clean. Cool completely on a wire rack.
To make the glaze, whisk all ingredients together in a small bowl and blend until smooth. Drizzle onto cooled muffins.
