If you are looking for an easy treat to share at a party or a make ahead brunch-side, try these delicious muffins. Foodstirs has brought the fun back to baking in my house. Boxed pancake and cake mixes have been popular since the 1930’s and have always been a fun and easy way to whip up a special treat with the kids, but have you looked at the back of their boxes? Seriously, have you looked? So many of the popular brands have a LONG list of ingredients I can’t pronounce and don’t wish to have in MY desserts.

Brown Butter, Banana, & Kale Mini Muffins
Prep: 10 min
Bake: 10 min
Yields: 12 – 15 mini muffins
Ingredients
For muffin:
1 Foodstirs Organic Sunday Stacks Pancake Mix
1 Once Upon A Farm Green Kale & Apples Pouch
4 Tbs butter, browned and cooled
2 eggs
1/3 cup milk of choice
For glaze:
1 Foodstirs Organic Glaze Mix
3 Tbs maple syrup
2 Tbs water
Directions
Preheat oven to 350 degrees and line a mini muffin pan with muffin liners. Set aside.
In a skillet over medium heat, melt the butter and heat until it begins to brown and smell nutty, about 3 minutes. Remove from heat and set aside.
In a large bowl, whisk together the eggs, milk and Green Kale & Apple pouch. Slowly add browned butter and dry pancake mix and whisk until a batter forms.
Spoon into muffin liners, filling each halfway full. Bake 7-10 minutes, until a toothpick inserted into the center comes out clean. Cool completely on a wire rack.
To make the glaze, whisk all ingredients together in a small bowl and blend until smooth. Drizzle onto cooled muffins.
